Around Salies-de-Beéarn, there are many salt sources. Salt from Salies-de-Béarn was the base for the salty ham of ‘‘Jambon de Bayonne’‘.

The legend is that a wild bore was wounded by a hunter. The bore ran and died in one of the salt lakes. The bore was foudn a few days later, and the meat absorbe the salt. That’‘s the legend how the ham of Bayonne was discovered.

This is the reason why the symbol of the city is a bore.
