The hidden mountain area of Saint Affrique is the place where the sheep graze which are the source for Roquefort. The rocks here are porous limestones with very shallow soils. Growing crops were and are not an option here. So, people were razing sheep here to survive. The story is that mold of bread was thrown in the sheepmilk and curd creating the specific blue color of the Roquefort cheese.
