Saint-Affrique is known for the cheese Roquefort. Roquefort is made from sheepmilk grazing on the hidden mountain area named after Saint-Affrique. The rocks here are a porous limestone. The precepetations seeps right through. The soil on top of the rock is very shallow. As such, not many crops could and can grow in this area. This is sheep country. Mold of bread was thrown in the milk and curds to make it ferment. This causes the blue colour of the cheese.
