The tomatoes of Santorini are very small but have a fabulous taste. They are called ''liastes''. The water they absorb comes only from the evaporated seawater captured by the porous (volcanic) tuffa rocks. The result is that the tomatoes stay quite small but the taste is the inverse. You also find them canned. Ask for them in a salad.
