The word Alsace contains the root ‘‘Als’’ meaning ‘‘salt’’. In this area, rock salt is found and also brime springs, such as in teh area of the Seille Valley of Lorraine. These have been exploited since prehistoric times.
The salt is/was used as source for choucroute.
