La goélette Santa Eulàlia fut restaurée entre 1998 et 2000 et constitua une expérience pionnière en Espagne. En suivant des critères rigoureux, la restauration a permis de récupérer l’aspect original du navire, en ayant recours à des métiers en voie de disparition et à des techniques spécifiques de la construction navale en bois.
Cinq années de travail minutieux (du 16 mars 1997, date d’arrivée de la Sayremer I à Barcelone, au 16 avril 2002, date de son premier voyage sous le nom de Santa Eulàlia) dont la récompense a été la récupération de ce patrimoine marin qui se trouvait en sérieux danger de disparition.
