Gaillac er en kommune i Tarn-afdelingen i det sydlige Frankrig. I 2013 havde den en befolkning på 14.334 indbyggere. Gaillac er en by, der ligger mellem Toulouse, Albi og Montauban. Den har opnået stor anerkendelse på grund af de vine, der bærer byens navn. Floden Tarn løber langs byens grænse mod syd, øst og vest. Den ligger 50 km nordøst for Toulouse. Det er en handelsby og er det kommercielle centrum i det nordvestlige Tarn.
