Beaune var fødestedet for Gaspard Monge (1746-1818), en berømt matematiker. Gaspard Monge eller grev af Péluse var en fransk matematiker, der blev kendt for at have grundlagt den beskrivende geometri, den videnskabelige tegning. Monge spillede en vigtig rolle under den franske revolution og var medstifter af École polytechnique i 1794. I 1800 bosatte han sig i Antwerpen og grundlagde den Høje Marine Skole i Antwerpen. Han er en af de 72 franskmænd, hvis navne er indgraveret på Eiffeltårnet.
