Universitetet i Coimbra er en af de ældste universiteter i Europa og dermed i verden og er det ældste universitet i Portugal. Institutionen blev grundlagt den 1. marts 1290, kort efter grundlæggelsen af Portugal, af kong Dionysius og har siden da været uafbrudt eksisterende. I dag studerer over 20.000 studerende ved UC, fordelt på otte fakulteter: Humaniora, Ret, Medicin, Videnskab & Teknologi, Farmaci, Økonomi, Psykologi & Pædagogik samt Idræt & Fysisk Uddannelse.
