Ai piedi della fortezza si trova "le capitulaire de Charlemagne". Il giardino medievale di Coucy è composto da un giardino, un orto e un frutteto, generalmente situati in mezzo alle tombe dei monaci.
Sono 29 le varietà che esistevano nella M-A (zucca, mesclun, barbabietola...). Tutto è fatto geometricamente, i quadrati della terra vanno per 4 o per multipli di 4, un numero che ricorda i 4 punti cardinali o i 4 elementi.
C'è una fontana, un riferimento al battesimo, il giardino è recintato, in memoria di Maria che ha dato alla luce un bambino rimanendo vergine.
Un giardino dell'Eden, simbolo mistico di Adamo ed Eva. Il giardino è delimitato da plessi fatti di piccoli rami intrecciati.
Il giardino è visibile dall'alto dei bastioni ma non è accessibile.
