L'attuale edificio del Castello di Mellet risale principalmente alla prima metà del XVII secolo. È stato ricostruito dopo un incendio sulle mura esterne di un'antica casa-roccaforte medievale, il che spiega lo spessore dei muri di oltre 2 metri. Della costruzione medievale rimangono le cantine e una stanza a volta al piano terra.
Il tetto mansardato, molto in voga nel XVII secolo, conferisce all'edificio una struttura leggera; nel XIX secolo, le aperture sono state ampliate per far passare più luce.
L'edificio a sinistra del castello è un ex tino per il vino, poiché tra il XVIII e il XIX secolo il castello era circondato da vigneti, devastati dalla fillossera all'inizio del XIX secolo
