Deftinge duikt voor het eerst op in historische documenten in 1050, toen als Dauatinge, waarschijnlijk oorspronkelijk een Keltisch woord dat verwijst naar de aanwezigheid van water. Zoals je zult merken, lopen er inderdaad diverse watertjes in het golvende landschap. Het oudste deel van de Sint-Ursmaruskerk (het koor) dateert nog uit de 13de eeuw, de westelijke toren werd gebouwd in de 17de eeuw, maar het grootste deel van de kerk, het schip en de dwarsbeuk, verrees in de 18de eeuw.
