Aigues-Mortes is een zwaar versterkte vestingstad met diverse stadspoorten en torens in het zuiden van Frankrijk, in het departement Gard. De inwoners worden Aigues-Mortais genoemd.
De stad is in de 13e eeuw gebouwd als uitvalsbasis voor de kruistochten voor de Franse koning, die liever niet in een vreemde haven als Marseille inscheepte. In die periode lag Aigues-Mortes nog direct aan zee en Aigues-Mortes was dus de eerste Franse uitweg naar de Middellandse Zee.
