La Camargue est le principal centre français de production de sel marin. L'eau de mer est pompée dans des bassins de terre et circule pendant cinq mois ; le niveau de sel augmente progressivement jusqu'à ce que la cristallisation se produise. Le sel est stocké sur des montagnes blanches étincelantes. Ces montagnes de sel sont appelées "la camelle".
