Heist ligger ved Geestrand grænsende op til Haseldorfer Marsch, hvor kommunen også har en del. Kommunen grænser op til Holm mod syd, Hetlingen, Haseldorf og Haselau mod vest, Moorrege mod nord og Appen mod øst.
Den første skriftlige omtale af Heist fandt sted i 1276. Det tilhørte adelsslægten von Heest. Ridderen Hartwich von Heest solgte byen i 1361 til klostret Uetersen. I midten af det 19. århundrede var befolkningstallet omkring 400 og ændrede sig kun lidt frem til Anden Verdenskrig til omkring 500. Efter 1945 steg befolkningstallet hurtigt på grund af tilflytningen af flygtninge fra østområderne til cirka 1500. I dag ligger det på cirka 2800.
