Herbstein er en by i den mellemtyske Vogelsberg-kreds. Siden 1962 har byen været en anerkendt kurby og siden 2000 desuden et statsligt anerkendt helle med - ifølge egne oplysninger - "Hessens højeste helkilde".
Herbstein ligger på en tidligere vulkankegle ved østskråningen af Vogelsberg. Kernbyen ligger ved den tyske eventyrvej, som strækker sig fra Hanau til Bremen. Storkommunen ligger i Naturpark Vulkanregion Vogelsberg og i Geopark Vulkanregion Vogelsberg. Dens laveste geografiske punkt ligger på 270 m over NN ved Stockhausen, og den højeste højderyg er Geiselstein i Oberwald med 720 m.
