Canicosa de la Sierra er en kommune og by i Spanien i provinsen Burgos, i det autonome samfund Castilla og León. Det ligger i regionen Sierra de la Demanda. Befolket i førromersk tid, ligesom resten af regionen, af stammen Pelendones, som efterlod spor i det næsten umulige at opfatte Castro de Canicosa. I det 18. århundrede gav kong Carlos IV tilladelse til at fjerne et bestemt antal træer. Det var en del af den Kongelige Kørevejskab, og var en af deres mest betydningsfulde deltagere.
