Pembroke Slot er et middelalderligt slot i centrum af Pembroke, Pembrokeshire i Wales. Slottet var den oprindelige familiesæde for Earldom of Pembroke. Et Grade I listet bygning siden 1951, gennemgik det en stor restaurering i begyndelsen af det 20. århundrede.
I 1093 byggede Arnulf af Montgomery det første slot på stedet, da han befæstede klippen ved Pembroke-floden under den normanniske invasion af Wales. Et århundrede senere blev slottet givet af Richard I til William Marshal, som blev en af de mest magtfulde mænd i 1200-tallets Storbritannien. Han genopbyggede Pembroke Slot i sten og skabte størstedelen af den struktur, der er tilbage i dag. Slottet er åbent for offentligheden og er det største privat ejer slot i Wales.
