Saint-Girons war im Mittelalter eine Sauveté, die an Bedeutung mit der von Mimizan konkurrieren konnte. Am Ortsausgang in Richtung Linxe steht in der Rue des Chênes eine 5 m hohe Säule aus weißem Stein, ein Überbleibsel dieser Sauveté, deren Bewohner unter der Autorität des Grundherrn und der Geistlichen standen und Schutz und bestimmte Freiheiten genossen. Diese Sauvetés waren Siedlungszentren und Zufluchtsorte für Jakobspilger.
