These paths are carved into the soft lime and limestone layers. You will regularly see dark bands between the layers of limestone. That is chert or also called flint. That flint or chert is a very hard rock that exhibits a shell-like or curved fracture when you split the rock. Therefore, in the Stone Age and much later, this stone was used to make axes, spearheads and knives. If you hit them together, you will also see a fire spark shoot away. Therefore, the popular name is also flint. That stone was also used to set fire to the pan in muskets, causing a small explosion. That stone has a completely different composition than the limestone.
