Avant le XIIe siècle, l'ancien Hôpital Saint-Jacques (Hôtel-Dieu) existait déjà à cet endroit, à proximité des remparts médiévaux. À l'origine, il s'agissait d'une maison d'hôtes médiévale, probablement tenue par les Templiers, puis par les Hospitaliers, et qui jouait un rôle important pour les pèlerins en route vers Saint-Jacques-de-Compostelle.
