Jork è un comune nel Basso Sassonia nella regione di Stade al confine sud-occidentale di Amburgo e il centro del Vecchio Paese, una delle più grandi aree di coltivazione di frutta in Europa.
Il luogo Jork fu menzionato per la prima volta in un documento nel 1221. Si sviluppò nel corso del tempo come centro amministrativo del Vecchio Paese. Nel 1885 Jork divenne sede del distretto prussiano di Jork, che comprendeva oltre al Vecchio Paese anche la città di Buxtehude e il comune di Neuland. Nel 1932 Jork perse la funzione di centro amministrativo, poiché il distretto fu sciolto e a ovest dell'Este fu unito al distretto di Stade, a est a quello di Harburg. Dal 1972 anche il tribunale di Jork non esiste più.
