Jork er en kommune i Niedersachsen i Landkreis Stade ved den sydvestlige grænse til Hamburg og centrum af det Gamle Land, et af de største frugtavlsområder i Europa.
Stedet Jork blev første gang nævnt skriftligt i år 1221. Det udviklede sig efterfølgende til administrationscenter for det Gamle Land. I 1885 blev Jork sæde for den preussiske kreds Jork, der udover det Gamle Land også omfattede byen Buxtehude og kommunen Neuland. I 1932 mistede Jork funktionen som administrationscenter, da Landkreis blev opløst og vest for Este blev tilsluttet Landkreis Stade, øst for dette blev tilsluttet Landkreis Harburg. Siden 1972 eksisterer der heller ikke mere en byret i Jork.
