Le acque cristalline di questo fiume, rinomato per la sua qualità ittica, ospitano una popolazione di trote spagnole e una popolazione autoctona di temoli. Al momento della deposizione delle uova, i grossi temoli maschi si vestono di un colore grigio antracite con riflessi blu acciaio, caratteristico del ceppo di Allier.
In queste acque fredde e veloci, le dimensioni delle trote rimangono modeste, fino a una media di 28-30 cm nelle gole. Qualunque sia la sua taglia, la trota dell'Allier mostra uno spirito combattivo formidabile, in grado di soddisfare il pescatore più esigente; pesciolini, ghiozzi, sculpini e grossi barbi si mescolano alla trota e al temolo, nonché al cavedano e alla vandoise, abbondanti nella zona a valle.
