Zeeland was het centrum van "Zelle". Dat is veen dat gedrenkt is in zout. De traditionele manier om zout te winnen uit het veen was om het te drogen en dan te verbranden. De as wordt gewassen in water om het zout er uit te halen. Als dit procesd echter niet goed wordt gedaan, dan wordt het zout zwart. Dit soort zout werd graag gebruikt om haring te pekelen. Zelle werd in het verleden zeer sterk belast. Er waren grote boetes voor iedereen die werd betrapt op het illegaal opgraven van turf in dit gebied.
