Le origini di Gottinga sono da ricercare in un antico villaggio chiamato Gutingi. Questo villaggio è menzionato per la prima volta in un documento del 953. La città vera e propria venne fondata tra il 1150 e il 1200 a nord-ovest del sopracitato Gutingi. Nel Medioevo la città fu membro della Lega Anseatica, arricchendosi molto.
Nel 1833 i fisici Carl Friedrich Gauss e Wilhelm Eduard Weber costruiscono il primo telegrafo elettrico, lungo 1 km, per collegare l'Osservatorio e l'istituto di Fisica.
A Gottinga sorge il monumento commemorativo della Notte dei cristalli, il pogrom condotto dai nazisti nella notte tra il 9 e 10 novembre 1938 in Germania, Austria e Cecoslovacchia. Il monumento è opera dell'artista Corrado Cagli, che lo realizzò componendo centinaia di stelle di Davide.
