I 1994 startede Nathalie Louis og Jacques Pougin en købmandsforretning i Bouillon. De besluttede at tilbyde et udvalg af lokale øl sammen med deres oste, og snart blev der tilbudt omkring halvtreds øl i butikken. Da interessen var vakt, begyndte Pougin at eksperimentere med egne ølopskrifter, og i 1996 fik han brygget sin egen første øl, Cuvée de Bouillon. Da øllen solgte godt, blev der set frem til at installere et eget bryggeri. I juni 1998 blev bryggeriet officielt åbnet i lageret bag butikken. Butikken blev derefter kun en butik for lokale øl. Der blev ikke kun brygget egne øl, men også originale øl for andre.
