Gau-Bischofsheim er en landsby med cirka 2200 indbyggere i Mainz-Bingen distriktet i Rheinland-Pfalz. Den tilhører kommuneforeningen Bodenheim.
Gau-Bischofsheim er en vinlandsby i den sydlige udkant af Mainz og grænser op til Harxheim mod vest. Andre nabokommuner er Bodenheim og Lörzweiler. Blandt beboerne kaldes landsbyen "Bischem". Den tætte nabo til Mainz og den delvist fremragende beliggenhed af vinmarkerne har præget stedet. Vinmarksarealet udgør 79 ha. Fyrstebiskopperne af Kurmainz havde her deres vingårde fra gammel tid. Nogle af vingårdene vidner om denne tradition. I nyere tid har nærheden til Frankfurt, Wiesbaden og Mainz betydeligt bidraget til udvidelsen af Gau-Bischofsheim.
