Jersbek blev første gang nævnt i 1310 som landsbyen Yrekesbeke. Stedet er kendt langt ud over Stormarns grænser på grund af sin goddsanlæg med herregården, der blev opført i 1620, portbygningen fra 1678 og den sandsynligvis bygget i årene 1736/1737 iskol.
I 1588 blev godset Jersbek adskilt fra stamgodset Borstel ved arv og blev selvstændigt under Hans von Buchwaldt. Det på en ø beliggende renæssanceherregård er en typisk holsteneranlæg, bestående af et dobbelthus med hver et saddeltag, tårnformet tilbygning og senere tilføjede sidefløje. Portbygningen krones af et tagrider.
