Eichstätt er en stor by i Oberbayern. Byen er sæde for den ligeledes navngivne kommune samt administrationen af naturparken Altmühltal, derudover er den bispesæde for bispedømmet Eichstätt og hovedsæde for det katolske universitet Eichstätt-Ingolstadt.
Byen ligger ved Altmühl, tæt på det geografiske centrum af Bayern og i trekanten mellem de største bayeriske såkaldte Oberzentren München, Nürnberg og Augsburg. Nabokommuner er med uret fra nord: Pollenfeld, Walting, Adelschlag, Dollnstein og Schernfeld.
