Saumur er en by og kommune i det franske departement Maine-et-Loire. Kommunen havde 26.467 indbyggere pr. 1. januar 2019. Det er hovedbyen i arrondissementet Saumur og kantonen Saumur. Saumur ligger i vinområdet i Loire-dalen og har en Appellation d'Origine Contrôlée. Saumur blev erobret i 1025 af Fulco III af Anjou, som fik byen brændt ned. Da kirken med relikvierne af den hellige Florentius også brændte, skulle han have råbt: "Sankt Florentius, lad dig dog brænde. Jeg vil bygge et bedre hjem til dig i Angers." Da transporten af relikvierne af den hellige til Angers dog viste sig at være vanskelig, skulle Fulco have erklæret, at Florentius var en landlig bondetosse, der var uegnet til bylivet, og han sendte relikvierne tilbage til Saumur.
