Laut den Archiven gab es ab den 1500er Jahren Steinbrüche, allerdings mit weniger bedeutendem Ertrag. Der Beginn des 16. Jahrhunderts brachte eine Wiederblüte dieses Wirtschaftszweigs. Schiefer wurde bereits als Dachdeckung für bedeutende Gebäude verwendet. Diese florierende Branche zu Beginn des 20. Jahrhunderts geriet anschließend in Verfall. In den Schieferbrüchen von Cahay waren zu dieser Zeit zwischen 150 und 280 Personen beschäftigt. 1957 gab es noch zwei Abbaustätten, aber leider haben sie inzwischen alle Aktivitäten eingestellt. Sehr kürzlich wurde die "Thier des Carrières" mit Bulldozern angegangen, die den Abfall der Steinbrüche entfernt haben, um die Wege im Wald zu befestigen.
