Bergheim war seit der Neolithischen Ära an dem Ort besiedelt, der als "Grasberg" bezeichnet wird.
Spuren römischer Wohnhäuser sind noch an der Stelle der Stadt und weiter östlich erhalten geblieben.
Im Jahr 705 wird es als "Bercheim" zitiert, eine phonologische Verkürzung von "Berg", Berg, und von "Heim", Heimat.
Das Dorf wechselte im Mittelalter insgesamt zweiunddreißig Mal den Besitzer, wobei der Hauptbesitzer die "Ribeaupierre" sowie die Herren von Ribeauvillé und das Haus Österreich waren.
Die befestigte Stadt profitierte bereits 1311 von den Asylrechten.
1848 wurden antisemitische Unruhen durch die Präsenz einer bedeutenden jüdischen Gemeinde in der Stadt ausgelöst.
Das Dorf wurde in beiden Weltkriegen auf wundersame Weise verschont.
