De ruimte "Rotonde", met een uitzonderlijk uitzicht van 180° op de Atlantische Oceaan, biedt verschillende soorten catering onder leiding van chef-kok Aurélien Largeau: een gastronomisch restaurant met een Michelin-ster, een meer traditioneel restaurant met een terras dat uitkijkt op het Grande Plage, een lounge voor een gastronomische middag of een snackmenu, en de Bar Napoléon III om te genieten van een kenmerkende cocktail.
De chef selecteert de beste lokale en visserij-ingrediënten naargelang het seizoen en brengt zo hulde aan het unieke karakter van Baskenland. Aurélien Largeau, een epicurist, is met de medewerking van de hoofdsommelier voortdurend op zoek naar de beste combinaties van spijs en wijn en zorgt voor een elitaire kaart met een prachtige bibliotheek van wijnen.
