At the time of Hildegard, Bingen was not only surrounded by vineyards, but grapevines also grew in many places in the city, such as on the Kloppberg. Hildegard's monastery on the Rupertsberg was also surrounded by vineyards. The sisters also had vineyards in Rheinhessen and the Pfalz. Wine played an important role in nutrition because, unlike water, it was not contaminated by bacteria and was considered a supplier of vitamins. Hildegard wrote about the beneficial effects of wine as follows:
„The vine has fiery
heat, and that fire is
so strong that it gives
its juice a taste that
is different from that of other
herbs. Wine makes the blood
of the drinker good and healthy.“
