Burgstien Ebermannstadt er en nedlagt middelalderlig tårnhøjbjergborg på Jurahøjen Wacht Knock vest for Ebermannstadt i Landkreis Forchheim i Bayern. Borgen var en af de magtfulde tårnhøjbjergborge.
Den tidligere borganlæg fra det 11. århundrede, som sandsynligvis tjente som flugtborge, med et samlet areal på cirka 2,5 hektar har en højbjergplateau med en diameter på over 30 meter og er fuldstændig omgivet af det 120 × 100 meter store forborg. Den planlagte ovale fem meter høje kernebjerg er omgivet af en hesteskoformet ydermur med en afstand på 22 meter.
