Olvés er en spansk kommune i provinsen Zaragoza, den autonome region Aragón. Den har en befolkning på 120 indbyggere. Dens kommunale område har en størrelse på 20,33 km² og en befolkningstæthed på 5,90 indb/km². Den ligger i Sierra de Pardos.
Olvés er en landbrug landsby, som på grund af sin geografiske placering og sin højde på 807 m. og 926 m. på det højeste punkt har nogle specielle egenskaber til dyrkning af visse landbrugsarter. Den har et areal på ca. 2500 Ha, hvoraf 500 er fyrreskove, 1500 landbrugsjord og resten lavtliggende skov. Af de dyrkbare jorde vil vi nævne de frugter, der oftest høstes samt deres sorter.
