Saint-Maurice-d'Ibie er en fransk kommune beliggende i departementet Ardèche, i regionen Auvergne-Rhône-Alpes. Dalen Ibie strækker sig over en tredive kilometer lang strækning, der begynder ved foden af Coiron i Villeneuve de Berg og ender, hvor den møder Ardèche. Dens flod er en sand tørre flod det meste af året. Mange husmure er bygget af de sten, der er transporteret af Ibie. Dalen Ibie, som hovedsageligt er kalkholdig, er dækket af alluvium, hvilket gør skråningerne frugtbare, når den breder sig. Her findes der især vin, men også lavendel og lidt korn.
