Red Herring er et berømt eksportprodukt fra East Anglia. Metoden til at lave Red Herring er at lægge den i en saltlage af salt og salpeter og derefter ryge den på eg og tørv. Historien siger, at denne teknik blev opdaget ved et tilfælde af en fisker fra Yarmouth, der havde en usædvanligt stor fangst. Han hængte overskuddet af silden i et rum med et særligt røgfyldt bål.
