Le Hareng rouge est un produit d'exportation célèbre de l'Est de l'Angleterre. La méthode pour faire du Hareng rouge consiste à le plonger dans une saumure de sel et de salpêtre, puis à le fumer avec du chêne et de la tourbe. L'histoire raconte que cette technique a été découverte par hasard par un pêcheur de Yarmouth qui avait eu une prise anormalement importante. Il a suspendu les surplus de hareng dans une pièce avec un feu particulièrement fumé. Le lendemain, il a remarqué que la chair blanche du hareng était devenue rouge.
