Einbeck ist eine ehemalige Hansestadt, ein Mittelzentrum und eine selbständige Gemeinde im Landkreis Northeim in Südniedersachsen und als niedersächsischer Ausflugsort anerkannt.
Nach zahlreichen Eingemeindungen ist Einbeck die flächenmäßig größte Stadt Südniedersachsens und aus selben Grund bezüglich der Einwohnerzahl auch die größte Stadt des Landkreises. Das Stadtbild im Zentrum ist geprägt von mehr als 150 spätmittelalterlichen Fachwerkhäusern. Einbeck ist wegen seiner jahrhundertealten Brautradition als Bierstadt bekannt. Die Bezeichnung Bockbier leitet sich vom Namen der Stadt ab.
