Aus der Werkstatt in Sauveterre wurde soeben Le Couteau de Sauveterre (Das Messer von Sauveterre).
Das vor 20 Jahren von Guy Vialis gegründete Unternehmen wurde vor kurzem von Christian Valat, dem Besitzer der Coutellerie Laguiole Traditions in Espalion, übernommen.
Diese Werkstatt hatte die Herstellung von Messern wieder aufgenommen, die vom 13. bis zum 18. Jahrhundert der wichtigste Wirtschaftszweig des Dorfes war.
Heute können Sie den Laden mit Blick auf die Werkstatt betreten, in der die Messermacher vor Ihren Augen Einzelmodelle und Sonderserien aus verschiedenen Materialien vom Mammut bis zu den neuesten Hightech-Verbundstoffen herstellen.
