Il laboratorio di Sauveterre è appena diventato Le Couteau de Sauveterre.
L'azienda creata da Guy Vialis 20 anni fa è stata appena acquistata da Christian Valat, proprietario della Coutellerie Laguiole Traditions di Espalion.
Questo laboratorio aveva ripreso la fabbricazione del coltello, che era l'attività principale del villaggio dal XIII al XVIII secolo.
Oggi è possibile entrare nel negozio con vista sul laboratorio dove i coltellinai realizzano modelli unici e serie speciali in diversi materiali, dal mammut ai più recenti compositi high-tech.
Sobria e pura, la sua linea la porta direttamente nel XXI secolo.
