Sébastien Zozaya, der 2019 zum besten Arbeiter Frankreichs im Bereich Charcutier Traiteur gekürt wurde, strebt seit jeher nach Spitzenleistungen. Sein reicher Werdegang zeugt davon. Er sammelte seine Erfahrungen bei großen Küchenchefs und arbeitete immer wieder mit anderen zusammen, was ihn zu Innovationen anspornte, so dass er nun "Charcuterie Pâtissière" und saisonale Wurstwaren zu seinen Signaturgerichten zählt.
Die Boutique in Bayonne ist ein neues Konzept für authentische und unkomplizierte Wurstwaren, bei dem alle Produkte hinter dem Glasdach der Werkstatt für alle sichtbar hergestellt werden. Hier gibt es einen Verkaufs- und Verkostungsraum, in dem die Wurstwaren mit einem Glas Wein oder hausgemachtem Bio-Apfelsaft serviert werden. Die Boutique in Bayon ist das Schaufenster der neuen Generation von Wurstwaren. Es ist ein Ort der Kreation und des Austauschs.
