Biochemist by training, specialising in brewing, and with a large space in the cottage that she had just purchased, Mélissa Résimont involved her brother Nicolas in the adventure in 2013. At first, the duo were producing about 20 litres; in 2016, production is reported to have been 675 hectolitres. In addition to their four permanent beers, Mélissa and
Nicolas offer a special brew in a limited edition once or twice a year.
