Patrice Ponsolle, a former employee of Bernard Loiseau's, officiates at the Jeu de Quilles, a place not to be missed if you're passing through Cajarc, and even worth a visit: mostly organic, local products, prepared with passion.
Iced pea soup, salmon gavelax with wasabi cream or piglet noir de Bigorre stuffed with its pearl juice, honey, ginger and lemon, plus a handful of new arrivals are sure to seduce.
The menu changes every day, the prices can be adjusted according to an attractive à la carte menu. And, for dessert, roasted pineapple cheese cake or mille-feuille and Tonka bean with its bitter orange marmalade are pure delicacies.
