It seems completely mysterious why there was ever a plan to fill in the beautiful canal belt of Amsterdam. But what we can no longer imagine today is what a filthy mess that canal belt was in the 19th century. It was simply an open sewer. In Jaffe Vink's book "Holy SHit," he describes how a traveler in Amsterdam depicted these canals. That traveler reported that those canals were an open sewer with excrement, stinking slaughter waste, fish waste, but also the carcasses of dogs, cats, and even horses.
