The Roman salting factory is located in the sleeper of Frei Gaspar, in the center of the city of Setúbal, in the basement of a building in which the services of the Costa Azul Tourism Region are installed. [1]
This Roman industrial unit, composed of fourteen pools, was discovered in 1979, following some works carried out in the same place. This cetaria or fish factory was dedicated to the salting of fish and small crustaceans, with which various foods and condiments were prepared, highlighting the garo. Setúbal, the Roman Cetobriga, was an important trading post that exported the garo throughout the Empire, thanks to the abundant fishing in the estuary of the Sado River. Two other salting factories of which remains have been found show this: one on Januário da Silva Street and another in Bocage Square. This activity also involved the development of auxiliary industries, such as pottery, shipyards, the manufacture of fishing nets, salt pans and agricultural activity, energizing the entire region.
