Las primeras huellas de lo que ahora se llama Brouwerij Boon se remontan a 1680, cuando J.B. CLAES compró una granja para establecer una cervecería-destilería. La cervecería pasó a manos de Louis Paul en 1860, y en 1898 a la familia Troch. Después de la crisis de 1927, la cervecería fue comprada por Jean De Vits, cuyo hijo la vendió en 1978 a Frank Boon, quien ya había comenzado modestamente en 1975 en Halle como elaborador de geuze y comerciante de cervezas regionales.
