La cervecería Einbecker es una cervecería en la ciudad de Einbeck, en Baja Sajonia, donde se elabora cerveza desde la Edad Media.
La cervecería es una sociedad anónima y empleó en 2018 a 124 empleados y 12 aprendices. Con una venta de cerveza de más de 558.241 hectolitros, se logró un ingreso de 31,6 millones de euros en 2018. La venta de las marcas propias Einbecker, Göttinger, Härke y Kasseler fue de 470.964 hectolitros en 2016. Entre las filiales se encuentran la cervecería Kasseler, la cervecería Martini y la cervecería Göttinger.
